34 years -- and counting -- of serving up school lunches

Mary Smith began her tenure in the Grand Island Public Schools' nutrition services department by running the bread-buttering machine.

"I used to say I had the softest hands in Grand Island," she said as she rubbed her hands together. "That butter was great."

The machine was a highlight on school field trips.

"Students would just stop and stare at it," she said. "We went through several hundred loaves of bread a day."

That was 34 years ago.

In September, Smith started her 35th year in the schools' nutrition services department. She's now the manager of the central kitchen in the Kneale Administration Building.

In between, Smith held various odd jobs and was an assistant cook. In 1992, she earned her certification and became the head cook. Five years later, she ran the south kitchen at Grand Island Senior High as the head cook and assistant manager. In 2002, she moved back to the north kitchen and became the manager of both locations.  Full Story
